Fresh slaw with bok choi

2-3 cups pac choi or bok choi, sliced thinly

1 large red bell pepper, thinly sliced

1 large green bell pepper, thinly sliced

4 scallions, slice thinly on an angle

½ cucumber halved, seeded and thinly sliced

Dressing

2 limes, juiced

¼ c. honey

3 T. vegetable oil

salt and pepper

Toss with dressing and serve immediately.
