Gazpacho

Ingredients for gazpacho

2 c. coarsely chopped tomatoes
1 c. coarsely chopped cucumber
½ c. coarsely chopped onion
½ c. coarsely chopped sweet pepper
¼ c. coarsely chopped chili pepper (your choice of heat)
2 cloves mashed garlic
2 T. balsamic vinegar or sherry
1 T. olive oil
½ t. Salt
¼ t. Sugar
¼ t. Cumin (smoked if available)

Process in food processor until smooth. Serve chilled with additional chopped cucumber or croutons.
